Bruschetta with Cottage Cheese, Cherry Tomatoes and Strawberries

An unusual, fresh, and surprising combination enriched by the unique touch of Guerzoni Organic and Biodynamic Balsamic Vinegar of Modena PGI.

If you love simple yet well-balanced flavors, this bruschetta is perfect for you. In just a few minutes, you'll have a light, wholesome, and wonderfully fragrant dish—ideal for a spring aperitif or a colorful and healthy lunch break.

Ingredients for 2 servings:

  • 2 slices of whole grain or multigrain bread

  • 4 tablespoons of cottage cheese

  • 6–8 ripe red cherry tomatoes

  • 4–5 fresh strawberries

  • 1 tablespoon of extra virgin olive oil

  • A few drops of Guerzoni Balsamic Vinegar of Modena PGI

  • Fresh mint leaves (optional)

  • A pinch of salt and pepper

Preparation:
Lightly toast the slices of bread in a pan or in the oven until golden and crispy. Spread the cottage cheese evenly on each slice. Wash and chop the cherry tomatoes and strawberries, then place them on top of the cheese. Drizzle with extra virgin olive oil, add a few drops of our Guerzoni Balsamic Vinegar, season with salt, pepper, and—if you like—some fresh mint leaves for an aromatic touch. Serve immediately... and enjoy the contrast between sweet, tangy, and creamy!
