Our recipes are developed to ensure the highest quality products. The list of ingredients is very short, and the most important ingredient is time. Some of our vinegars are unique in the world and produced in limited quantities, such as Traditional Balsamic Vinegar of Modena P.D.O. extra-old organic and biodynamic.
Pioneers of an alternative way of doing agriculture in Italy, we were among the first Italian farms to grow organic and biodynamic grapes and the first vinegar factory to produce organic and biodynamic Balsamic Vinegar of Modena. Suffice it to say that Acetaia Guerzoni has been Demeter biodynamic certified since 1984.
The crown jewel of our products is the Traditional Balsamic Vinegar of Modena P.D.O. extra-old: a unique vinegar in the world because it is already organic and biodynamic despite over 25 years of aging.
We are first and foremost farmers - a word that for us represents a set of values - and farmers are also our partners, from whom we purchase the grapes (all organic and biodynamic) that we are unable to produce entirely from our own land. With each of them we have cultivated, often for decades, relationships based on trust and transparency, on love for the land and for man, and on care for what nourishes both.
Our first value is, in fact, the quality of our products, which must be much more than good and genuine: they must give us back the taste of a time when there were the field and the vineyard, the sun and the seasons that dictated the rhythms of our life.
Together with other farmers who share our values we have created the Le Madri Foundation (Fondazione Le Madri), an Italian point of reference for biodynamic agriculture.

In the 1970s, the Guerzonis asked themselves the same questions as German farmers who, in the 1920s, asked Rudolf Steiner, founder of biodynamics: how the quality of agricultural products can be improved and obtain more genuine and more nutritious foods?
The reflections that underlie our history, combined with the teachings handed down from generation to generation, still substantiate the values that proudly guide our production and entrepreneurial choices today.

Tradition and innovation
Our products are made with carefully selected Italian raw materials. They respect an ancient local tradition (we are members of the two consortia for the protection of balsamic vinegar of Modena), innovating it where possible, for example by introducing new flavors among the condiments and packaging with an advanced design and sustainable materials.
Careful transformation
The transformation processes are those refined by tradition: the must is cooked over direct heat and the fermentations are slow, with vinegar mother or GMO-free self-produced ferments. In this way the product is enriched with aromas and flavours, yeasts and probiotic bacteria.
Transparency and traceability
We only use organic and biodynamic Italian raw materials, without the addition of synthetic substances, keeping the supply chain as short as possible and tracing the origin of every single ingredient.
Commitment to the planet
We have been certified organic and biodynamic producers since 1984. It means that we practice regenerative agriculture, that 10% of the land is forested or reserved for biotopes important for biodiversity, that we do not use GMOs and that we work to increase the fertility of the land, capable of giving us better products and absorbing more CO2. Our packages use as little plastic as possible and the packaging cardboard is made from grape waste.
Commitment to man
At the beginning of our story there is a desire: that of living in a healthy environment where man was at the center. We want agriculture that promotes human life within an ecosystem that connects all natural elements. As for our products, they are all naturally rich in antioxidants.
Commitment to the community
The biodynamic approach is also motivated by a deep desire for justice, respect and social responsibility. Every year we make donations to the Food Bank or allocate part of the profits to solidarity projects.
