Baked Apricots with Gorgonzola, Walnuts, Thyme and Guerzoni Apple Glaze
Ingredients (serves 4):

8 ripe but firm apricots

80 g mild gorgonzola

30 g shelled walnuts

2 tablespoons honey (optional)

Guerzoni Apple Glaze, to taste

Freshly ground black pepper, to taste

Fresh thyme leaves (optional)
Instructions
Preheat the oven to 180°C (static). Wash the apricots, cut them in half and remove the pits. Place the apricot halves cut-side up on a baking tray lined with parchment paper. Fill each half with a small piece of gorgonzola and a few walnut pieces. If you like, drizzle with a little honey for extra sweetness.
Bake for about 10–12 minutes, until the cheese is slightly melted and the apricots are soft but still holding their shape.
Remove from the oven, arrange on a serving plate, and finish with a generous drizzle of Guerzoni Apple Glaze, a grind of black pepper, and, if desired, a few fresh thyme leaves.
Serving suggestion
Serve warm as a gourmet appetizer or elegant finger food for a summer aperitif. The Guerzoni Apple Glaze enhances the fruit’s sweetness and makes this dish irresistible!
