Rooted in the fertile plains of Modena, this vinegar’s journey began in the 1970s, when Arduino and Zina Guerzoni, after a life as sharecroppers, used their savings to buy a farmhouse surrounded by vineyards.
In the 1980s, with love and respect for the land, they began producing cooked must, saba, and—most precious of all—traditional balsamic vinegar, aged in wooden barrels that would slowly transform it into a treasure chest of aroma and sweetness. In the 1990s, under Lorenzo’s guidance (son of Felice and Iride), the Guerzoni family became pioneers in biodynamic certification: the first in the world to obtain a biodynamic DOP thanks to their visionary approach.
Biodynamic tradition and attention to detail
From the beginning, Guerzoni has embraced a deeply respectful agricultural method, following Rudolf Steiner’s teachings. The grapes, both organic and biodynamic, are cultivated according to natural cycles, without chemical fertilizers or pesticides. The cooked must is prepared over a direct flame, preserving the authentic nuances of the grapes, and the vinegar matures in barrels arranged in a “battery,” a symbol of Emilian tradition.
Even the packaging reflects this poetic care: the new bottle, entirely plastic-free, features a crown cap and integrated pourer, a jewel-like protection for this precious liquid.
