A fine red wine vinegar fermented in oak barrels, with a strong but not aggressive taste and a wide spectrum of aromas. Only organic and biodynamic red grapes for a vinegar treated like a great wine.
Our barreled wine vinegar is a product of excellence, made exclusively with Lambrusco grapes. These grapes are carefully cultivated and fermented to transform them into vinegar, avoiding the use of sulfites or other substances. The vinegar matures and completes its acetic fermentation in oak barrels, following a very slow process that enhances its aromas and makes it smoother on the palate. Thanks to the action of live acetic bacteria, the alcoholic component of the wine is converted through the absorption of oxygen from the wood. To maintain the vitality and intensity of the aromas, we avoid pasteurizing our product.
Ideal for those who appreciate sharper and stronger flavors, its 6% acidity makes it excellent for salads.
